Espaliers are an old garden feature, dating back to the Roman Empire when monks grew grapes for their communion wine. To provide protection from cold weather and to create space, the grapevines were trained to grow against the garden walls. They were shouldered or “espaliered” (es-PAL-ya). Later the French refined the method and it became an art form.
